Basic cheese sauce.

Ingredients

  • 75g mature Cheddar cheese, grated
  • 1 pint milk
  • 40g plain flour
  • 40g butter
  • salt and freshly ground black pepper

Method

  1. Put the milk, flour and butter into a medium saucepan and put on a gentle heat.
  2. Bring it to a gentle simmer, whisking all the time.
  3. Keep whisking until you have a smooth and shiny sauce
  4. Simmer very gently for a few minutes
  5. Add the cheese and whisk until the cheese has melted.
  6. Season with salt and pepper.
