Basic cheese sauce.
Ingredients
- 75g mature Cheddar cheese, grated
- 1 pint milk
- 40g plain flour
- 40g butter
- salt and freshly ground black pepper
Method
- Put the milk, flour and butter into a medium saucepan and put on a gentle heat.
- Bring it to a gentle simmer, whisking all the time.
- Keep whisking until you have a smooth and shiny sauce
- Simmer very gently for a few minutes
- Add the cheese and whisk until the cheese has melted.
- Season with salt and pepper.
