An important ingredient in Yorkshire cooking is lard.... and some things just don't taste right wthout it!

Ingredients

  • 6 heaped tbsp plain flour (use Self raising for extra fluffy puds)
  • 2 eggs
  • Pinch of salt
  • 2/3 milk to 1/3 water to mix (use guess work for the consistency!)
  • Lard for cooking

 

Method

  1. Beat ingredients together until thick
  2. Place lard into pudding tins and put into the oven on Gas 7 until lard is melted and smoking and you can smell it
  3. Pour mixture into tins
  4. Cook until risen and golden (30 mins ish)

 

Note by Ed: Though lard is traditional, goose fat works well too!
