A healthier alternative to beef lasagne

Ingredients

  • 1 tsp Olive oil
  • 450g minced turkey/chicken
  • 4oz bacon, chopped
  • Clove garlic
  • 225g Leek, sliced (1 large leek)
  • 4oz Carrots
  • 1tbsp tomato puree
  • 250ml chicken stock
  • Cheese sauce (approx 1 pint)*
  • Lasagne sheets

 

Method

  1. Heat oil and brown the turkey and bacon.
  2. Add carrots and leek and cook for 5 mins until soft.
  3. Add tomato puree, stock and seasoning. Bring to the boil and simmer for 30 minutes.
  4. Prepare cheese sauce and make up the lasagne in a dish
  5. Cook on gas 5 for 40 mins to 1 hour
