Great plain, soaked in alcohol and with cheddar cheese (ok its a Yorkshire thing - but trust me it tastes nice!). Personally I leave out the almonds, but only because I'm not too keen on them and it tasted just as nice without!

It makes two 7- 8 inch circular cakes or three 6 inch square cakes. I usually mix it in a purpose bought washing up bowl with a wooden spoon rather than risk my kenwood chef!

Ingredients

  • 1.5lbs self raising flour
  • 1lb margarine (something like Stork)
  • 1/2 lb dark brown sugar
  • 1/2 lb glace cherries
  • 10 large eggs
  • Pinch of salt
  • 2lb currants
  • 1/2 lb ground almonds (optional)
  • 2 tbsp cold water
  • 1 tbsp baking powder
  • 3/4 lb white sugar
  • 1lb raisins

 

Method

  1. Mix together the sugar and eggs
  2. Mix in rest of ingredients
  3. Cook on gas mark 2 for 3 hours ish or until cooked through
